Brunch: My Favorite Pancake Recipe

I love having brunch with my family especially in NYC. One of my favorite places to go for brunch is Balthazar’s. However, having a Pastry Certificate from the Institute of Culinary Education here in NYC, I have tried out so many recipes that I love to explore with my family. Some good. Some bad. What I look for in a recipe is consistency and of course kid approval. Something else I look for in a good recipe is, versatility meaning that I can add fruit, chopped chocolate, and chopped nuts. My personal favorite is fruit. I love it when it bursts in the batter while it is cooking. Today I used bananas and brunch at my house was awesome. Here is my recipe. Enjoy!

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 2 large eggs, lightly beaten
  • 3 cups buttermilk
  • 4 tablespoons unsalted butter, melted, plus 1/2 teaspoon for griddle
  • fresh or frozen fruit or any other add-ons

Directions

  1. Heat griddle to 375 degrees. Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl. Add eggs, buttermilk, and 4 tablespoons butter; whisk to combine. Batter should have small to medium lumps.
  2. Heat oven to 175 degrees. Test griddle by sprinkling a few drops of water on it. If water bounces and spatters off griddle, it is hot enough. Using a pastry brush, brush remaining 1/2 teaspoon of butter or reserved bacon fat onto griddle. Wipe off excess.
  3. Using a 4-ounce ladle, about 1/2 cup, pour pancake batter, in pools 2 inches away from one other. When pancakes have bubbles on top and are slightly dry around edges, about 2 1/2 minutes, flip over. Cook until golden on bottom, about 1 minute.
  4. Repeat with remaining batter, keeping finished pancakes on a heatproof plate in oven. Serve warm.

Makes about nine 6-inch pancakes

My Mango Salsa

Yesterday I made mango salsa. I wouldn’t say it is a comfort food for winter but I couldn’t resist. It so fresh and full of flavor I had to make it. Now when I make salsa I like to always try to have multiple uses for it. For instance, salsa with chips is a given bit I also like to incorporate it in my grilled cheese sandwiches! It brings so much flavor and compliments mild cheeses in many ways. These cheese I happen to have on hand was Gouda. Mmmm so tasty…
